Turkey Taco Bowls

These Shady Brook Farms® Turkey Taco Bowls were an easy, healthy and budget friendly meal the whole family loved.

  • Step 1

    Mix the sweet potatoes with about 2 tbsp. of olive oil and roast them at 425°F for about 30 minutes. Toss them half way through to make sure they roast evenly on all sides.
  • Step 2

    While that’s roasting, cook the ground turkey as directed on the back of the taco seasoning packet. Keep it warm over low heat once it’s done.
  • Step 3

    Add about 2 tbsp. of olive oil to a skillet over medium high heat. Add the peppers and onion and sauté until they’re soft (about 5 minutes).
  • Step 4

    Separate the rice into 4 bowls, top each bowl with evenly divided shredded cheese, peppers, onions and the taco seasoned ground turkey.
  • Step 5

    Serve warm and enjoy.
