Turkey Taco Bowls
These Shady Brook Farms® Turkey Taco Bowls were an easy, healthy and budget friendly meal the whole family loved.

- 1 package Shady Brook Farms® Ground Turkey (any lean point)
- 1 taco seasoning packet
- 1 sweet potato, peeled and cubed
- 1 cup cheddar cheese, shredded
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 cup minute white rice
- Olive oil
Step 1Mix the sweet potatoes with about 2 tbsp. of olive oil and roast them at 425°F for about 30 minutes. Toss them half way through to make sure they roast evenly on all sides.
Step 2While that’s roasting, cook the ground turkey as directed on the back of the taco seasoning packet. Keep it warm over low heat once it’s done.
Step 3Add about 2 tbsp. of olive oil to a skillet over medium high heat. Add the peppers and onion and sauté until they’re soft (about 5 minutes).
Step 4Separate the rice into 4 bowls, top each bowl with evenly divided shredded cheese, peppers, onions and the taco seasoned ground turkey.
Step 5Serve warm and enjoy.
