Turkey Taco Bowls
These Shady Brook Farms® Turkey Taco Bowls were an easy, healthy and budget friendly meal the whole family loved.

Ingredients
- 1 package Shady Brook Farms® Ground Turkey (any lean point)
- 1 taco seasoning packet
- 1 sweet potato, peeled and cubed
- 1 cup cheddar cheese, shredded
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 cup minute white rice
- Olive oil

Step 1
Mix the sweet potatoes with about 2 tbsp. of olive oil and roast them at 425°F for about 30 minutes. Toss them half way through to make sure they roast evenly on all sides. -
Step 2
While that’s roasting, cook the ground turkey as directed on the back of the taco seasoning packet. Keep it warm over low heat once it’s done. -
Step 3
Add about 2 tbsp. of olive oil to a skillet over medium high heat. Add the peppers and onion and sauté until they’re soft (about 5 minutes). -
Step 4
Separate the rice into 4 bowls, top each bowl with evenly divided shredded cheese, peppers, onions and the taco seasoned ground turkey. -
Step 5
Serve warm and enjoy.
