Beer Braised Sausages with Cilantro Lime Slaw

Smoke-braise is combining braising and smoking.  Braising is cooking in a liquid that covers the side of the meat, but not the top. Braising in a smoker will impart smoke flavor and keep the sausages from drying out.

Ingredients

Cilantro Lime Slaw

  • 1 tbsp. ground cumin
  • 1 tbsp. chili lime seasoning
  • 1 lime (juice and zest)
  • 2 tbsp. honey
  • 2 tbsp. olive oil
  • 1 tbsp. white wine vinegar
  • Salt & pepper to taste
  • 3 cups thinly sliced Napa cabbage
  • ½ red onion, thinly sliced
  • ½ cup freshly chopped cilantro
  • 1 thinly sliced jalapeno

  • Step 1

    Preheat the grill to medium-high heat.
  • Step 2

    Place an aluminum foil pan on grill and add onion, garlic, 1 tablespoon olive oil, and beer.
  • Step 3

    Heat braising mixture to a simmer and add sausages. Braise for 20 minutes. Remove sausages and pat dry with a paper towel. Preheat grill to high heat.

    Combine cumin and chili lime seasoning in a small bowl. Brush sausage with remaining 1 tablespoon olive oil and rub with seasoning mixture.

    Place sausages on grill and grill until the skin is crisp.

    For the Cilantro Lime Slaw, combine cumin, chili lime seasoning, lime juice and zest, honey, olive oil, vinegar, salt and pepper in a medium mixing bowl.

    Add cabbage, onion, cilantro, and jalapeno and toss to combine.
  • Step 9

    Let coleslaw rest for 10 minutes before serving. Serve with Beer Braised Sausages.
