Step 1
Preheat the oven to 350 degrees Fahrenheit. -
Step 2
Prep the pasta according to the package while you start the rest of the meal. -
Step 3
In a mixing bowl combine the ground turkey, egg, breadcrumbs, garlic, salt and pepper. Mix well and form into meatballs using a 2 tbsp cookie scoop. -
Step 4
In an oven safe skillet over medium high heat, sear the meatballs on each side for about 1 minute on each side. -
Step 5
Place the skillet in the oven to finish cooking the meatballs. About 15 more minutes or until the internal temperature reaches 165 degrees fahrenheit. -
Step 6
To make the sauce, start by heating some olive oil in a cast iron skillet over medium high heat. -
Step 7
Take your bell peppers and char each side approx 3-4 minutes each side. The skin should start to blister! -
Step 8
When the peppers are mostly tender (after 10 minutes or so) place them in a food processor with the cashews, parmesan, ricotta, chili flakes, salt, pepper, and diced tomatoes. -
Step 9
Pulse until everything becomes finely chopped. Start to stream in the milk and blend until the sauce becomes smooth -
Step 10
When the meatballs are done, remove the skillet from the oven and pour the parmesan pepper sauce over the meatballs. -
Step 11
When the pasta is finished, plate some in a bowl or serving dish and top with the parmesan pepper meatballs. Enjoy!
