Lemon Thyme Split-Roast Turkey

 A time-saving, flavorful Thanksgiving Turkey from Yummy Toddler Food with the delicious flavors of lemon, onion, thyme, butter, and garlic.

Ingredients

  • 8-10 lb. Shady Brook Farms® Whole Turkey
  • 2 celery stalks
  • 2 lemons
  • 2 shallots
  • 6 garlic cloves
  • 2 tbsp fresh rosemary and/or thyme
  • ½ cup melted unsalted butter
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • Step 1

    Remove and discard the neck and giblets. Place the turkey breast side down in a roasting pan and use kitchen shears to cut down one side of the backbone. Turn the turkey over and flatten as much as possible. Cut off and discard the tips of the wings.
  • Step 2

    Roughly chop the celery and shallots. Halve the lemons. Mash the garlic. Discard all peels. Tuck under the turkey.
  • Step 3

    In a small bowl, combine the rosemary or thyme, butter, lemon zest, lemon juice, salt, and black pepper. Rub all over the turkey.
  • Step 4

    Roast uncovered at 375 degrees F 1 ½- 2 hours, or until an instant read thermometer reads 175 degrees F and the juices run clear. Remove from the oven, cover with foil, and let sit for 15 minutes before carving.
