One Skillet Turkey Parmesan

- 1 lb turkey cutlets
- 1 tsp salt
- ½ tsp pepper
- 1 cup shredded parmesan cheese
- 1/2 cup Italian breadcrumbs
- 3 tbsp olive oil
- 2 tsp garlic, minced
- 2 cups marinara sauce
- 5-6 thin slices of fresh mozzarella
- Freshly chopped basil for topping
- Extra parmesan for topping
Step 1Preheat the oven to broil.
Step 2Remove the turkey cutlets from the packaging and pat dry with paper towels.
Step 3In a large mixing bowl or shallow plate combine the shredded parmesan cheese, breadcrumbs, salt, pepper, and garlic powder.
Step 4Rub each cutlet with olive oil on each side.
Step 5Take each turkey cutlet and press both sides into the breadcrumb mixture and set aside on a plate. Repeat for all turkey cutlets.
Step 6Heat a large skillet with the remaining 1 tbsp olive oil over medium high heat.
Step 7Add in the turkey cutlets and cook for 2 minutes on each side, until browned and set aside on a plate.
Step 8Pour in the marinara sauce around the turkey cutlets and add back in the cutlets.
Step 9Top each cutlet with a thin slice of fresh mozzarella cheese.
Step 10Place the skillet in the oven and broil for 4-5 minutes or until the turkey reaches an internal temperature of 165 and the mozzarella is melted and bubbling.
Step 11Remove and top with parmesan and fresh basil.
