Smoked Turkey Tails in Honey & Vinegar BBQ Glaze

Smoky, tender turkey tails are finished with a sweet and tangy honey-vinegar BBQ glaze.

Ingredients

For the glaze:

  • 1/2 cup favorite BBQ sauce
  • 2 tbs honey or maple syrup
  • 1tbsp apple cider vinegar
  • Step 1

    Clean and trim the turkey tails then rinse and pat dry. Rub with olive oil.
  • Step 2

    Mix all dry seasonings (salt, paprika, garlic powder, onion powder, chili powder, cumin, and brown sugar) together and toss the turkey tails in the seasoning mixture until evenly coated.
  • Step 3

    Preheat your smoker to 250°F. Use apple, hickory or pecan wood chips for best flavor. Smoke turkey tails for 1½ to 2 hours, until they are golden brown and tender and reach an internal temperature of around 200°F.
  • Step 4

    During the last 30 minutes of smoking, brush the tails with the BBQ glaze mixture. Let it sit and caramelize before serving. Garnish with fresh sliced scallions.
