Thanksgiving Turkey and Sweet Potato Hash

Ingredients
- 2 ½ cups leftover diced, cooked Shady Brook Farms® turkey
- 2 tbsp. unsalted butter
- 2 medium sweet potatoes, diced
- 1 diced yellow onion
- 8 oz diced mushrooms
- 1 tsp. paprika
- ¾ tsp. Salt
- ⅓ cup leftover gravy
- Hot sauce to taste
- Fresh parsley, optional for serving
- Soft boiled eggs, optional for serving

Step 1
Heat a large saute pan over medium heat, add 1 tablespoon of the butter and the sweet potatoes, then saute for 4 minutes. -
Step 2
Next, add the remaining butter, the mushrooms and the onions and saute for another 4 minutes. Add the paprika and salt, toss to combine then cover for another 4 minutes. -
Step 3
Last, add the turkey and hot sauce and cook for another 5-10 minutes, until the veggies are soft and cooked through. -
Step 4
Serve with soft boiled eggs and parsley, if using.
