Turkey Chipotle Sliders

Ingredients
- 2 lbs. Ground Turkey (any lean point)
- 1 tbsp. olive oil
- 1 package chipotle taco seasoning
- 12 slices provolone cheese, about 8 ounces
- 12 King’s Hawaiian buns
- 3 oz. fresh watercress
- 1 ½ cups mayonnaise
- ½ cup crema, also known as Mexican Table Cream
- ¼ cup honey
- ½ cup chopped cilantro
- 2 tbsp. lime juice
- 3 to 4 chipotles with the adobo
- ½ tsp. kosher salt
- ½ tsp. freshly ground black pepper

Step 1
Heat grill to medium-high heat or prepare a charcoal grill for direct heat. -
Step 2
Coat a large baking sheet with non-stick spray. Combine the turkey, taco seasoning, and olive in a large bowl, use clean hands to combine. Divide the turkey into 12 balls a little bigger than a ping-pong ball, about 2 ½ ounces each. Flatten each ball into a patty on the baking sheet. Use a clean kitchen towel to brush the grill grates with olive oil just before grilling. -
Step 3
Grill the turkey patties for 4 minutes, and then flip and continue to cook the other side for another 2 minutes. Add a slice of provolone to each burger and close the grill for 1 minute while the cheese melts. -
Step 4
Remove the burgers to a clean plate and toast the buns for 1 minute on the hot grill. Put each patty on a hawaiian bun, top with the chipotle mayo and the watercress just before serving. -
Step 5
For the Chipotle Mayo, combine the mayo, cream, honey, cilantro, lime juice, and chipotles in the bowl of a food processor and pulse to combine. -
Step 6
Season with salt and pepper and store in an airtight container in the fridge until ready to use, up to 5 days in advance.
