Turkey Poke Bowl

Turkey Poke Bowl with an Asian flavor profile. Sauteed ground turkey with soy sauce and sesame oil mixed with vegetables and served over rice.

Ingredients

  • 1 package Shady Brook Farms® Ground Turkey
  • 3-4 tbsp. sesame oil
  • 3-4 tbsp. soy sauce
  • 1 chopped red bell pepper
  • 1 bunch of scallions, chopped and separated into whites and greens
  • 1 diced sweet potato
  • 1 cup cooked white rice
  • 2 tbsp. spicy mayo
  • Step 1

    Sauté ground turkey and green onion whites in 2 tbsp. of sesame oil & 2 tbsp. of soy sauce until cooked through.
  • Step 2

    Remove and set aside on a plate.
  • Step 3

    In the same skillet, sauté bell pepper, diced sweet potato and more soy sauce & sesame oil.
  • Step 4

    Cover with lid and allow sweet potatoes to cook until soft.
  • Step 5

    Add the turkey back into the pan and mix together.
  • Step 6

    Serve turkey mixture over white rice and garnish with the greens of the scallions and a drizzle of spicy mayo.
