Turkey Stuffed Peppers

Ground turkey seasoned with chili powder, cumin and black pepper mixed with white rice and stuffed in sweet bell peppers topped with breadcrumbs and baked golden. Served with spicy queso blanco.

Ingredients

  • 1.25 lb ground turkey
  • 2 tablespoons vegetable oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon black pepper
  • 1 tablespoon kosher salt
  • 1 cup cooked white rice
  • 6 bell peppers
  • 1 cup white cheese dip
  • ½ teaspoon hot sauce
  • 1 cup fresh breadcrumbs
  • Step 1

    Preheat oven to 425°F. Prepare and baking dish with vegetable cooking spray, set aside.
  • Step 2

    Heat oil in a large skillet over medium heat. Cook the turkey seasoned with chili powder, cumin, black pepper, and salt, for 10 minutes. Fold in the cooked rice and set aside.
  • Step 3

    While cooking the turkey, prepare the peppers. Slice the peppers in half and deseed and core the center of the peppers. Place in the baking dish and fill in the centers with the turkey and rice mixture.
  • Step 4

    Combine the cheese dip and hot sauce together and pour over the turkey and finish with breadcrumbs.
  • Step 5

    Cover the dish with foil and cook for 15 minutes and uncover, continuing to cook for 15 minutes.
