White Turkey Chili
Ground turkey in seasoned vegetable broth with cumin, garlic, white pepper, and cayenne stovetop cooked with sweet onion, cannellini beans and chickpeas. Finished with diced avocado, fresh jalapeños and cilantro and served with corn chips.

Ingredients
- 1.25 lb ground turkey
- 2 tablespoons vegetable oil
- ½ cup diced yellow onion
- 1 tablespoon minced garlic
- ½ tablespoon kosher salt
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- ½ teaspoon white pepper
- ¼ teaspoon ground cayenne pepper
- 2 ½ cups vegetable broth, divided
- ¼ cup cream
- 1 (16oz) can chickpeas, drained
- 1 (15.5oz) can cannellini beans
- ¼ cup corn starch
- 1 teaspoon chili powder
Garnishes
- Corn chips
- 1 cup diced fresh avocado
- ¼ cup sliced fresh jalapeños
- ¼ cup freshly chopped cilantro

Step 1
Heat oil in a large stock pot over medium heat. Sweat the onions and garlic for 2 minutes. Add the turkey seasoned with salt, cumin, garlic powder, white pepper, and cayenne. Cook for 8 minutes and add chickpeas and beans, cook for an additional 2 minutes. -
Step 2
Stir in 2 ¼ cups of vegetable broth and cream, cover and cook for 8 minutes. -
Step 3
Combine the remaining broth with corn starch and chili powder. Stir the starch mixture into the chili until thicken begins, about 10 minutes. -
Step 4
Serve family-style with corn chips and fresh garnishes.
