Apple-wood Smoked Turketta with Bacon Apple Gravy

Ingredients
- 1 package Bacon Wrapped Turkey Breast ‘Turketta’
- Olive oil or melted butter (for basting)
- 8 slices bacon
- ½ cup yellow onions, ¼ diced
- 1 garlic clove, fine mince
- 1 granny smith apple- peeled, cored, 1/4” diced
- ¼ cup all-purpose flour
- 1 quart chicken stock or roasted turkey stock
- 1 tsp. ground sage
- 1 tsp. dried thyme
- Salt & pepper to taste

Step 1
Fill smoker box with Apple-wood pellets. Preheat the smoker to 250°F. -
Step 2
Place the Turketta, Bacon Wrapped Turkey Breast on the smoker. Approximately every 30 minutes, baste the turkey breast with the olive oil or melted butter. -
Step 3
While the Turketta is cooking prepare the Bacon Apple Gravy. -
Step 4
Cut bacon into 1/8” to ¼ “ slices, add to a small sauce pot. Cook over medium heat until bacon begins to crisp, approximately 5- 7 minutes. Add onions, garlic and diced apple. Cook until the onions and apples begin to soften (5 minutes). -

5. Add the flour and herbs and cook for two additional minutes. -
Step 6
Add chicken stock or smoked turkey stock. Bring to a boil. Reduce and simmer for 20 minutes, allowing the gravy to thicken. Salt and Pepper to taste. -
Step 7
Continue to baste every 30 minutes until the turkey breast reaches a minimum internal temperature of 165°F (approximately 3 ½ hours), making sure to insert the thermometer in the thickest portion of the breast. -
Step 8
Allow the turkey breast to rest for 10 minutes prior to slicing. Slice and place on a platter and serve immediately with the Bacon Apple Gravy.
