Asian Turkey Patties & Vegetable Stir-fry Bowl

Asian Turkey Patties and Vegetable Stir-Fry Bowl combines flavorful turkey with a colorful array of stir-fried vegetables, all served over a bed of rice. Ground turkey mixed with soy sauce, sriracha and sesame oil rolled with panko breadcrumbs and flattened into small patties and pan-seared golden. Served over fried rice with sugar snap peas, diced carrots, and broccoli. Finished with toasted sesame seeds and Bang Bang Sauce.

Ingredients

  • 1 lb ground turkey
  • 2 cups basmati rice
  • 3 tablespoons rice vinegar, divided
  • 2 tablespoons sugar
  • 1 tablespoon dried chives
  • 1 teaspoon kosher salt
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 tablespoon, 1 teaspoon low-sodium soy sauce, divided
  • 1 teaspoon sriracha sauce
  • 1 tablespoon, 2 teaspoons sesame oil, divided
  • 1 tablespoon corn starch
  • 1 cup panko breadcrumbs
  • 1 cup vegetable oil
  • ½ cup diced red onion
  • 1 cup diced carrots
  • 1 tablespoon minced garlic
  • 1 cup sugar snap peas
  • 1 cup broccoli florets, small
  • 1 tablespoon sesame seeds
  • ¼ cup prepared bang bang sauce
  • Step 1

    Heat oil in a large skillet over medium heat.
  • Step 2

    Prepare rice according to package directions. Season with 2 tablespoons of rice vinegar and sugar. Set aside and keep warm.

    While the rice is cooking; combine the turkey with chives, salt, ginger, garlic, 1 teaspoon soy sauce, sriracha, 2 teaspoons sesame oil and starch together in a mixing bowl.
  • Step 4

    Pour the breadcrumbs onto a plate. Remove small amounts of turkey into round bites and press the turkey thin in breadcrumbs, coating both sides. Immediately start cooking the patties in the skillet, flipping often, and cooking thoroughly. Repeat this step until all the turkey is cooked. Chef’s note: this is a fast cook step, only 15 minutes to finish all the turkey patties. So, when the patties start turning golden and crisp on both sides they are probably done. Use an instant-read thermometer to check the internal temperature to be 165F or simply cut in half to make sure the juices run clear.

    In the same skillet, cook the onions, carrots, and garlic for 3-5 minutes, until the carrots are tender. Stir in the peas and broccoli and continue cooking for another 3-5 minutes. Season with the remaining soy sauce, sesame oil, 1 tablespoon of vinegar and sesame seeds. Remove from the heat and set aside.
  • Step 6

    Build the bowls with rice topped with vegetable stir-fry and the turkey patties. Finish with your favorite bang bang sauce.
