Chipotle Turkey Grilled Breakfast Sandwich

Delicious chipotle turkey grilled breakfast sandwich made with a perfectly toasted brioche bun, a spicy chipotle aioli, a layer of arugula, a hearty and protein packed Shady Brook Farms turkey patty covered with cheese, a fried egg and slices of avocado. Breakfast just got a lot more fun!

Ingredients

Chipotle Aioli

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1/2 tsp chipotle powder
  • 1 tsp sriracha
  • 2 tsp lemon juice
  • 1/2 tsp salt
  • pinch pepper
  • Step 1

    Prepare chipotle aioli by mixing all of the ingredients together. Set aside.
  • Step 2

    Grill patties 5-6 minutes on each side or until internal temperature reaches 165F. Add slice of cheese on and let lid close to melt for additional minute.

    While patties are grilling, brush brioche bun with melted butter and grill for about a minute or until golden brown.

    On a greased side skillet, cook eggs sunny side up, over easy, or over medium. I like sunny side up so the yolk is still running. You can do this right on the grill on a skillet or on your stove-top.
  • Step 5

    Assemble sandwich by adding a layer of chipotle aioli to the bottom bun, adding a handful of arugula and sliced avocado, then adding the cheese patty, and cooked egg. Add more chipotle aioli to top of bun and then add top bun to the sandwich.
