Greek Turkey Tenderloin Wraps

Keep it simple this summer with these easy Greek-inspired wraps packed with flavorful marinated turkey tenderloins, homemade cool & creamy tzatziki sauce, pickled onions, and veggies in a grain free wrap. Totally customizable and kid-friendly, too!

Ingredients

For the wraps

For the marinade

  • 1/2 cup olive oil
  • 4 cloves garlic
  • 2 tbsp. red wine vinegar
  • 1 tsp. dried thyme
  • 1 tsp. dried oregano
  • 1 tsp. dried parsley
  • 1/2 tsp. salt

For the pickled onion

  • 1 large red onion, sliced thin
  • 1/2 cup distilled white vinegar
  • 1/2 cup water
  • 1 tsp. sea salt
  • 2 tsp. maple syrup

For the Tzatziki sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup finely grated cucumber, squeezed with a paper towel to remove excess moisture
  • 1 tbsp. lemon juice
  • 1/2 tbsp. extra virgin olive oil
  • 2 cloves minced garlic
  • 1 tbsp. fresh chopped dill
  • 1/4 tsp. salt

  • Step 1

    Combine the marinade ingredients in a casserole dish or bowl and whisk. Add the 24 oz. of turkey breast tenderloin and turn it to make sure it’s coated completely. Let it marinade for 10 minutes (up to overnight).
  • Step 2

    Meanwhile, make the pickled onions. Add the sliced onions to a medium sized bowl or contained. Add the apple cider vinegar, water, salt, and maple syrup to a small pot on the stove and bring to a boil. Stir, then turn off the heat. Pour the mixture over the onions and use a fork to press the onions down into the liquid. Let them sit while you make the turkey and tzatziki sauce.
  • Step 3

    Preheat your grill over medium high heat. Add the marinated turkey tenderloin and cook for 20-30 minutes, flipping every 5 minutes, until the internal temperature reaches 165°F.
  • Step 4

    While the turkey is cooking, make the tzatziki sauce. Combine the sauce ingredients in a bowl and whisk well. Set aside.
  • Step 5

    When the turkey tenderloin is done, transfer it to a cutting board. Slice it into thin pieces.
  • Step 6

    Lay the wraps out flat and add a layer of tzatziki, followed by some of the turkey, tomatoes, cucumbers, pickled onions, and feta. Fold the wrap over and slice in half. Enjoy!
