Step 1
Heat a large skillet to medium heat. When it’s hot, add 2 Tablespoons extra virgin olive oil and the sausages. Cook for 8-10 minutes, turning frequently until nicely browned and the sausages reach an internal temperature of 165°F.

Remove sausages and cut each sausage on a bias into 6 slices of equal size.

Using the same skillet at medium heat, add 2 more Tablespoons of extra virgin olive oil, the sliced peppers, and sliced onions. Cook and stir occasionally for 5 minutes. Reduce the heat to medium low, add in the garlic, salt, pepper, dried basil, tomato paste, and vinegar. Continue to cook and occasionally stir for another 5 minutes until the peppers and onions soften.

Add the sausage slices to the skillet with the pepper and onions. Stir to combine and cook over low heat for 3-5 minutes until warmed through.

Load the sausage, peppers, and onions into the hoagie rolls, garnish with fresh basil, and serve!
