Leftover Turkey Sandwich

  • Step 1

    Pre-heat the oven to 400°F.
  • Step 2

    Add the slices of sourdough to a baking sheet and drizzle the bread with olive oil and sprinkle on the Italian herbs.
  • Step 3

    Toast in the oven for 3-5 minutes until nicely browned. Set aside.
  • Step 4

    In a small bowl, whisk the mayo and Dijon mustard.
  • Step 5

    Layer the sandwich starting with brie, sliced sweet potato, spinach, cranberry sauce, turkey, and finally top with the Dijon mayo.
  • Step 6

    Top the sandwich with the other slice of bread and return to the oven for 3-5 minutes until the brie is melting out of the sides.
  • Step 7

    Slice down the middle and enjoy!
