Ingredients

  • 1 package Shady Brook Farms® Turkey Breast Tenderloins
  • 4-5 chipotle peppers in adobo
  • 4 tbsp. honey
  • 1 tbsp. cumin
  • 1 ½ cups brown or white rice
  • 1 (14 oz.) can of black beans, drained and rinsed
  • 1 tsp. salt
  • ½ tsp. pepper
  • ½ yellow onion, diced
  • 1 tbsp. olive oil
  • 1½ cups chicken stock
  • ½ cup cilantro, chopped
  • Juice of 2 limes
  • Step 1

In a blender, blend the honey, chipotle peppers, and cumin until smooth. You may need to add a splash of water to thin it out. If so, you can add up to 2 tablespoons of water. Set aside.
  • Step 2

In a skillet over medium heat, add the tenderloins and glaze one side with the chipotle mixture.
  • Step 3

Cook the tenderloins on this side for 5-7 minutes then flip.
  • Step 4

Glaze the other side of the turkey with the rest of the chipotle mixture. Cook for another 5 minutes.
  • Step 5

Remove the turkey from the pan after it has reached an internal temperature of 165°F and set aside.
  • Step 6

Add 1 tablespoon of olive oil and the chopped onion to the pan. Sauté for 3 minutes.
  • Step 7

Add the rice, chicken broth, salt, pepper, lime juice, and black beans.
  • Step 8

Bring to a simmer and add the turkey back to the pan.
  • Step 9

Reduce the heat to medium low, and cover the pan. Cook until the rice is tender.
  • Step 10

Uncover and stir in the cilantro.
  • Step 11

Slice the turkey and serve with the cilantro lime rice.
