Thanksgiving Leftover Casserole

Ingredients
- 4 cups leftover Fresh or Frozen Whole Turkey Breast, chopped into ¼ inch pieces
- 3 cups mashed potatoes
- 2 cups thick shredded sharp cheddar cheese, separated
- 1 can cranberry sauce
- ¼ cup craisins
- 3 cups prepared stuffing
- 2 cups cooked delicata squash (substitute in butternut squash)
- 1 cup green beans
- 2 cups spinach

Step 1
Preheat the oven to 375°F. -
Step 2
In a 9x13 baking dish, layer mashed potatoes, cranberry sauce, squash, spinach, green beans, 2 cups of the prepared stuffing, ½ the cheddar cheese, and then add the chopped turkey. -
Step 3
Finish topping the casserole by crumbling the last cup of stuffing over the turkey and top with remaining cheese. -
Step 4
Bake until the stuffing topping is browned and crispy on top and the cheese is melted, about 15 minutes.
