Turkey Breakfast Sausage with Fancy Scrambled Eggs

Ingredients
- 1 package Shady Brook Farms® Turkey Breakfast Sausage Links
- 1 Tablespoon extra light olive oil
- 8 eggs
- ¼ teaspoon kosher salt
- ½ teaspoon dry ground mustard
- 2 Tablespoons heavy cream
- 1 Tablespoon salted butter
- 1 teaspoon finely minced fresh chives, for garnish

Step 1
Heat a large skillet to medium heat. Add in the olive oil and the sausage links. Cook for 10 -12 minutes, until an internal temperature of 165°F is reached on a meat thermometer, frequently turning and moving them around in the pan to ensure even browning. -
Step 2
In a medium bowl, add in the eggs, salt, dry mustard, and heavy cream. Whisk until well combined. Add the butter to a skillet and heat to medium low. When the butter is melted, add in the beaten eggs and gently stir with a spatula until soft set or cooked to your liking. -
Step 3
Garnish the eggs with fresh chives and serve with the sausage links.
