Turkey Sweet Potato Hash Skillet

- 1 package Turkey Breast Cutlets, Or, 1 package ground turkey
- 2 sweet potatoes
- 1 medium onion
- 2 tablespoons olive oil
- Freshly ground pepper
- 1/2 teaspoon dried thyme
- 2-3 poached eggs
- 1/4 cup chopped fresh parsley, optional

Step 1Peel sweet potatoes and onion and dice into 1/2 inch pieces.
Step 2Heat a large skillet over medium-high heat and add olive oil.
Step 3Add sweet potatoes and onions to the skillet with oil and season with a pinch of salt.
Step 4Cook, stirring from time to time for 5 minutes, until onions begin to turn golden brown and potatoes soften.
Step 5Add turkey breast strips and season with another pinch of salt, ground pepper and dried thyme. Continue to cook, stirring until the turkey is cooked to 165° F and brown on the edges, about 4-5 minutes.
Step 6Garnish with parsley and top with poached eggs.
