How to braise turkey sausages on the grill

Smoke-braise combines braising and smoking. Braising is cooking in a liquid that covers the side of the meat, but not the top. Braising in a smoker will impart smoke flavor and keep turkey sausages from drying out.

  • STEP 1

    Add turkey sausage and aromatics like onions or garlic to an aluminum pan.

  • STEP 2

    Add water, beer or the braising mixture of your choice to the pan.

  • STEP 3

    Place the pan directly on the hot smoker and let it heat up until it reaches a simmer. Let it simmer for about 20 minutes. Note: if you don’t have a smoker, you can use your grill. Just be sure to keep the lid closed.

  • STEP 4

    Remove sausages, pat dry and sear on the grill to finish.
