BBQ Turkey Stuffed Sweet Potatoes
Sweet and spicy BBQ ground turkey stuffed into creamy, buttery sweet potatoes.

Ingredients
- 1 package Shady Brook Farms® Ground Turkey (any lean point)
- 4 sweet potatoes
- Salted butter
- BBQ seasoning blend (make sure it includes salt)
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 cup spicy BBQ sauce, plus more if needed
- 2/3 cup corn

Step 1
Clean and dry the sweet potatoes, then air fry at 400°F for 40 to 50 minutes, depending on the size of your potatoes. -
Step 2
Meanwhile, melt two tablespoons of butter in a large non-stick skillet over medium heat. Add the onions and sweet bell peppers, season with your BBQ seasoning blend, and cook until softened, about 6 minutes. -
Step 3
Add the ground turkey to the onions and peppers, and break it down to small pieces. Season with the bbq blend, and cook until the liquid evaporates and the meat begins to caramelize just slightly, about 7 to 9 minutes. -
Step 4
Add the corn, and cook until heated through, about 3 minutes. Pour in the BBQ sauce and allow the mixture to simmer for about 3 to 5 minutes, or until thickened. Adjust the heat as needed. -
Step 5
Finish with a pat of butter, about a tablespoon, and stir to combine. Keep warm until the sweet potatoes are done. -
Step 6
When the potatoes are done, carefully split them down the middle to expose their flesh. Optionally, add a little pat of butter to them and season them with your BBQ blend. Fill each potato with your desired amount of BBQ turkey filling. -
Step 7
Serve immediately and enjoy!
