Creamy Turkey & Veggie Pasta

Ingredients
- 1 package Shady Brook Farms® Original Turkey Breast Tenderloins
- 8 oz. penne rigate pasta
- 4 cups baby spinach
- 1 medium zucchini, spiralized and cut into smaller strands
- 1 cup parmesan cheese, plus more for garnish
- 1 1/4 cup heavy cream
- Garlic seasoning blend (make sure it includes salt)
- Olive oil

Step 1
Preheat oven to 375°F. -
Step 2
Add 1 tablespoon of olive oil to the turkey breast tenderloins and massage thoroughly, ensuring that they’re evenly coated. Season all sides of each tenderloin with your prepared garlic seasoning blend. Set a large oven-safe non-stick skillet over medium-high heat, then add one tablespoon of olive oil. When the oil is hot, carefully place each tenderloin into the skillet and sear until golden brown, about 3 to 4 minutes. Flip the tenderloins over and immediately place into your preheated oven to finish roasting for an additional 15 to 20 minutes, or until the internal temperature registers 165°F on an instant-read thermometer. -
Step 3
Meanwhile, boil the pasta according to “al dente” package directions. It should take about 8 to 10 minutes. Carefully reserve about one cup of pasta water in case you need it later. Drain the pasta well and set aside. -
Step 4
When the turkey breast tenderloins are done, remove the skillet from the oven and transfer the tenderloins to a plate. Tent with foil and let rest for at least 10 minutes. Cube one of the tenderloins, and slice the other. -
Step 5
Set the same skillet you roasted the turkey in back over medium heat, and add the spinach. Season generously with your garlic blend, adding a little more olive oil if needed. Cook for about 1 minute, then add the zucchini. Cook for another minute, then pour in the heavy cream, add the pasta and toss to combine. If you need to add any pasta water at this point, do it in 1/3 cup increments. When the sauce starts to reduce, test the doneness of your pasta. When it’s perfect, reduce the heat to low and add in the cubed tenderloin and cheese. Toss to combine. Taste and adjust the seasoning. -
Step 6
Turn off the heat and begin to plate the pasta, adding the sliced tenderloin on top. -
Step 7
Garnish with more parmesan cheese, and enjoy!
