Grilled Sausage & Veggie Pasta Salad with Smoked Mozzarella

Ingredients

Dressing

  • Juice of 2 lemons
  • Zest of 2 lemons
  • 1/2 cup olive oil
  • 2 tsp. salt
  • 1 tbsp. dry dill
  • 4-5 fresh basil leaves, sliced
  • ¼ cup cilantro, chopped
  • Step 1

    Prepare the pasta according to the package instructions.
  • Step 2

    While the water is boiling, prepare the dressing by whisking together the lemon juice, lemon zest, olive oil, salt, dill, basil, and cilantro. Set aside.

    Once the pasta is finished, drain and place in a large bowl to cool down.

    Preheat your grill to medium high heat.

    Prep the vegetables by cutting the peppers, zucchini and onion in half.

    Drizzle the bell peppers, zucchini, onion, and corn with olive oil and place on the grill along with the Sweet Italian Turkey Sausage.

    Cook for 4-5 minutes on each side and remove the veggies.

    Continue to cook the turkey sausage until the internal temperature reaches 165°F.

    Once everything is finished cooking, chop the veggies and slice the cooked turkey sausage.

    Tear the mozzarella cheese into small pieces.

    Add all of the grilled vegetables, sliced sausage, mozzarella, and dressing to the pasta in large mixing bowl and toss well to combine.

    Top with fresh basil and enjoy.
