Lemon Garlic Orecchiette Pasta with Italian Style Turkey Sausage and Broccoli Rabe

Ingredients
- 1 package Shady Brook Farms® Lean Turkey Sausage Links – Sweet Italian
- OR 1 package Shady Brook Farms® Lean Turkey Sausage Links – Hot Italian
- 4 Tablespoons extra virgin olive oil, split use
- 1 bunch fresh broccoli rabe, tough ends trimmed off and cut into 1-inch pieces
- 2 cloves garlic, minced
- ⅛ teaspoon crushed red pepper flakes
- 1 teaspoon kosher salt
- ⅛ teaspoon fresh cracked black pepper
- 1 pound orecchiette pasta, cooked al dente according to package directions, reserve ½ cup pasta water
- ½ teaspoon lemon zest
- 2 Tablespoons fresh squeezed lemon juice
- ¼ cup shaved parmesan cheese, optional

Step 1
Heat a large skillet to medium heat, add in 2 Tablespoons extra virgin olive oil and the sausages. Cook for 8-10 minutes, turning frequently until nicely browned and the sausages reach an internal temperature of 165°F. -
Step 2
Remove sausages and cut each sausage into 8 slices of equal size. -
Step 3
Using the same skillet at medium heat, add 2 more Tablespoons of extra virgin olive oil, broccoli rabe, garlic, crushed red pepper flakes, salt and pepper. Cook and stir occasionally for 3-5 minutes until the broccoli rabe softens a bit. Add in the sausage slices, cooked pasta, reserved pasta water, lemon zest, and lemon juice. Gently stir to combine and cook over low heat for 2-3 minutes. If desired, top the pasta with shaved parmesan cheese. Serve and enjoy!
