Thai Turkey Sliders with Red Curry Mayo

Ingredients
- 1 lb. 85% Lean Ground Turkey
- Diamond Crystal kosher salt
- Black pepper, freshly ground
- 1/2 cup mayonnaise
- 1 TB Thai red curry paste
- 8 slider buns, toasted
- 16 dill pickle slices
- 5 TBs Thai sweet chili sauce

Step 1
Prepare the sliders. Divide the ground turkey into 8 equal balls. Shape each ball into a patty approximately 3" across, or about the size of the slider buns. Cover and refrigerate until needed. -
Step 2
Prepare the red curry mayonnaise. Combine the mayonnaise and Thai red curry paste in a small bowl. Using a rubber spatula or whisk, stir well until combined. -
Step 3
Season the sliders with salt and pepper as desired. On a grill or in a sauté pan, cook over medium heat for 5-8 minutes or until an internal temperature of 165°F is reached on a meat thermometer. -
Step 4
As the patties cook, spread the red curry mayonnaise on the tops of the slider buns. Place the pickles on the bottom half of buns. -
Step 5
When the sliders are cooked, remove from heat and place on the bottom buns. Drizzle the Thai sweet chili sauce on top of the patties and add the bun tops.
