Thai Turkey Sliders with Red Curry Mayo

Ingredients

  • 1 lb. 85% Lean Ground Turkey
  • Diamond Crystal kosher salt
  • Black pepper, freshly ground
  • 1/2 cup mayonnaise
  • 1 TB Thai red curry paste
  • 8 slider buns, toasted
  • 16 dill pickle slices
  • 5 TBs Thai sweet chili sauce

  • Step 1

    Prepare the sliders. Divide the ground turkey into 8 equal balls. Shape each ball into a patty approximately 3" across, or about the size of the slider buns. Cover and refrigerate until needed.
  • Step 2

    Prepare the red curry mayonnaise. Combine the mayonnaise and Thai red curry paste in a small bowl. Using a rubber spatula or whisk, stir well until combined.
  • Step 3

    Season the sliders with salt and pepper as desired. On a grill or in a sauté pan, cook over medium heat for 5-8 minutes or until an internal temperature of 165°F is reached on a meat thermometer.
  • Step 4

    As the patties cook, spread the red curry mayonnaise on the tops of the slider buns. Place the pickles on the bottom half of buns.
  • Step 5

    When the sliders are cooked, remove from heat and place on the bottom buns. Drizzle the Thai sweet chili sauce on top of the patties and add the bun tops.
