Turkey Sausage, Peppers and Onions with Creamy Polenta

- 1 cup medium or coarse polenta
- 1/4 teaspoon dried thyme
- Freshly ground black pepper
- Cooking spray
- 2 tablespoons extra-virgin olive oil, divided
- 1 cup shredded fontina cheese
- 1 large white or yellow onion, thinly sliced
- 2 medium green peppers, seeded and cut into 1/2-inch wide strips
- 2 medium red peppers, seeded and cut into 1/2-inch wide strips
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- Grated Parmesan cheese

Step 1Cook polenta according to package instructions. When polenta is cooked, take it off the heat and add thyme, pepper, fontina and olive oil, and stir until melted and very creamy; keep warm.
Step 2Heat a large, preferably nonstick, skillet and coat with cooking spray. Place the sausages in skillet and cook over medium-high heat, until brown on each side, about 5 minutes per side, then add 1/4 cup of water and cover, turning heat to medium-low. Cook for another 5 minutes.
Step 3Take sausages out of pan and place on a cutting board to cool. When cool, cut sausages into 1/2-inch diagonal slices.
Step 4Pour liquid out of the skillet, then add the remaining tablespoon of olive oil, onions and peppers; cook over medium-high heat until softened, about 7 minutes.
Step 5Add the sliced sausages and garlic to the pan; stir and cook for 2 minutes.
Step 6Deglaze the pan with wine and simmer until liquid is reduced to just a few tablespoons.
Step 7Spoon polenta onto plates, top with the sausage mixture, sprinkle with Parmesan cheese.
